Super simple but delicious chicken curry made Palakkad style using shallots, onions and fresh masala. This deep coloured chicken curry not only tastes amazing but is easy to make as well.
This is a simple chicken curry made using fresh spices and shallots. The masala is darker in colour which gives the curry a deep rich colour.

Ingredients
Chicken - 1 kg bone-in and cut into small pieces
Turmeric Powder - 1 tsp
Salt to taste
FOR ROASTING & GRINDING:
Shallots / Sambar Onion - 15
Dry Red Chillies - 5 to 6
Coriander powder - 3 tablespoons
Red Chilli Powder - 1 tablespoon
Cumin powder - 2 teaspoon
Garam Masala Powder - 1 tablespoon
Turmeric Powder - 1 teaspoon
Coconut Oil - 1 tablespoon+ 3 tablespoon
Onion - 2 large sliced thinly
Curry Leaves a handful
Ginger Garlic paste - 2 tablespoon
Lemon Juice - to taste
Coriander Leaves a handful chopped finely
Curry leaves a sprig
Salt to taste
Instructions
Take chicken in a bowl add salt and turmeric and mix well. leave to marinate for 30 mins.
Heat 1 tablespoon oil in a Kadai. Add in shallots and dry red chillies and fry for 3 mins. Remove to a blender.
Now in the same Kadai. Add in spice powders and toast them for 2 to 3 mins.
Remove to the same blender and puree till smooth.
Heat more oil in the Kadai. Add in onions and curry leaves and cook till golden.
Add in ginger garlic paste and mix well.
Add in chicken and mix well.
Cover and cook the chicken till it is half done.
Add in the ground masala and mix well. Cover again and cook for 10 to 15 mins on low flame.
Turn off the heat and add in lemon juice, curry leaves and coriander leaves. Mix well.
Serve it.
